Silverside beef is ideal for slow cooking, and we prefer it pot-roasted with lots of onions. Pressure cooked is a good way to keep it succulent or in a pot in the oven over night on a bed of root vegetables and a bunch of fresh bay and thyme. Size is usually between 1 and 1.5kg.
